Why is wine lying down



Experts say that wine should be placed lying down, but we can often see a lot of wine standing upright in wine shops or supermarkets. Will standing wine harm the wine quality? What is the reason for wine lying down?

Why is wine lying down?

In fact, the reason why wine should lie down is related to oxygen. If the wine with oak cork is stored upright for a long time, the natural wine cork is easy to shrink due to drying, and even cracking occurs, causing too much oxygen to enter the wine bottle and react with the wine, causing the oxidation of the wine liquor. The alcohol in wine reacts with oxygen to produce acetic acid, which destroys the flavor of the wine.


It can be seen that the wine with natural oak cork must be placed lying down, so as to ensure that the end of the wine cork in the wine bottle maintains a moist state and prevents oxygen intrusion caused by the drying and cracking of the wine cork. In addition, wine should also be stored in a place where the ambient humidity reaches 50% to 80% to prevent the other end of the wine cork from becoming dry and broken.

Do wines that use screw corks need to be placed?

At present, there are more and more wines using metal screw corks on the market, especially wines from the New World production area. Do these wines that do not use natural corks need to be placed? The answer is naturally no. There is no special reason for the use of screw corks to store the wine, so you can place it at will according to your wine cabinet or shelf. However, lying down can maximize the use of space, so lying down is still the best way to store wine in this case.

What other wines do not need to be laid down?

In fact, in addition to the use of screw plugs, there are some wines that do not need to be stored strictly lying down. For example, for sparkling wine, whether lying or standing upright has little effect on wine quality. This is because the pressure caused by the carbon dioxide trapped in the sparkling wine bottle can provide enough humidity for the wine stopper to prevent oxygen from entering the wine bottle.

A study by the French Champagne Industry Council (CIVC) pointed out that champagne will accelerate its aging when lying down, because prolonged contact with wine will cause the cork to lose its elasticity. In this case, more oxygen will penetrate into the wine. Oxidation occurs in the bottle. In addition to sparkling wines, fortified wines such as Madeira do not need to be stored in a lying manner, because fortified wines are already over-oxidized during the brewing process, even when making Madeira. The wine will be heated to a high temperature of 60 degrees Celsius, and deliberately exposed to the air to accelerate oxidation, resulting in a special flavor. Because of this, fortified wines can be stored for a long time without deterioration even after opening the bottle, not to mention the small amount of oxygen infiltrated by the shrinkage of the cork caused by vertical standing.
